The Onion, a tasty sulfuric compound Cutting onions can be one of the most painful
experiences in the kitchen. There are quite a few ways you can ward off the tears...

- Use a really sharp knife. You will release
fewer gases if you cleanly slice through. Have a dull knife? We can sharpen your knives or keep your own knife
sharpener on-hand.
- Cut out the core of the onion—where the root comes out. This
section has the most tear-inducing properties.
- Soak the onion in water before cutting—water
will dilute the sulfuric compounds. In fact, rinsing onions before eating will take away the bite but leave the delicious
flavor!
- Fridge before you cut. The sulfuric compound that leads to tears will not react as
quickly when it’s cold. (Or freeze up to 10 min.)
- Light a candle. A burning flame can
burn away the sulfuric fumes.
- Protect your eyes. Although it seems extreme, you can actual
wear eyewear specifically designed to keep the sulfuric compounds at bay, called “Onion Goggles” to protect your
eyes. Yep, we sell them.

them in a basket. This tidy trick will keep them on-hand and your kitchen looking warm and organized!
The holidays are here, and with it
comes the prospect of braised sauces and hearty stews. Our favorite cooking pot for such classic dishes is the Mario
Batali Dutch oven, shown here in orange. A great size for family gatherings!
